Orange & Carrot Cupcakes with Citrus Cream Cheese Frosting

Since the downtown area is a no go area cause of the floods we had a few days ago I have been spending more time at home and I took to trying out more cupcake recipes.

These are some delicious cupcakes,soft and moist. One can taste the carrot and the orange altogether. The citrus frosting just about adds more flavour to the soft cupcakes.

 Summer and bright colors go along just fine. Attended an aunt's wedding a few weeks back and this is what I wore.It was an orange affair.I enjoyed the wedding as I got to dance to many of songs played at weddings back home.

Snake Print Dress

 Loving the summer days and enjoying each and every day as it comes. Besides the floods that had parts of my city underwater all other days have been super good.

I'm loving all things pleated, soft pleats rather. I like feeling the breeze blow past and take it one day at a time for summer days in this hemisphere are rather few.

The Color Red

  What better way to welcome the warm weather other than enjoying the outdoor life. It was rather warm so   we decided to drive out to Elbow Falls, have a BBQ and meet new people. Had a good time and look forward to Summer 2013.

Lately I have been baking and trying out different recipes that I feel my friends would enjoy. I tried out the yogurt cake recipe that my friend suggested and I have since perfected it. When I began following the recipe I used all the right measurements. In many recipes that I try out I always find that the sugar is way to much for my taste. So as I perfected the recipe instead of using the 1cup sugar I altered it to half a cup. I find that altering the sugar content still brings out the taste I love.

Recipe
1/2 cup butter,softened                         2 cups all-purpose flour
1 cup sugar                                            1 teaspoon baking soda
1 teaspoon vanilla extract                       1/2 teaspoon baking powder
1 egg                                                     1 cup plain yoghurt

Directions

-Preheat oven to 350degrees. Grease and flour 9inch Bundt pan.
- Cream together butter,sugar and vanilla until light and fluffy.Beat in egg until smooth. Combine flour,baking soda and baking powder. stir into the batter alternately with the yogurt.
- Bake for 50minutes in the preheated oven.

Where the mountains meet the Prairie.....



Since moving to Calgary,AB  I have been visiting different towns that surround Calgary. Whenever I have the time, weather permitting I enjoy having some of these scenery drives. A few weekends ago we decided to visit Lethbridge which is about a 3hour drive out of Calgary. Along the way we diverted to the Waterton Parks.  The drive was awesome , breathtaking as we passed through snow peaked mountains, ranches, small pretty towns. Those areas have pretty much had the whole winter as roads were icy and in so some parts it was snowing as we drove through. All in all I enjoy these drives and look forward to more.  Every little town has a story to tell.

Our final destination was Lethbridge which was were we would visit a friend maybe have dinner and a few drinks. Unfortunately that didn't happen but the drive was so much fun.

Another warm Sunday and I wore the tweed dress from with the Mary Jane shoes.I decided to add some color to the outfit to just pop out. I decided on getting the dress instead of the skirt and I do not regret it.

Salmon, Mixed Salad and Chapatti

I've been thinking a lot about going on a veggie and protein eating scheme. I know it will be kinda difficult to follow through but I sure hope to do it. I found a salmon recipe and i decided to mix it up with the new salad dressing recipe I got from a friend.

Salmon, Mixed salad with some home made dressing and Chappati

Salad Dressing Recipe
Mayonnaise, Honey, Lemon

Salmon
Place seasoned salmon on top of sliced lemon, slice butter and place on top of salmon 
Wrap salmon in foil paper.
Place in oven and bake for 25 minutes at 300 degrees.
